'Twas the 13th of April...
Apr. 13th, 2005 04:09 pmand how am I celebrating my birthday?... With the unveiling of my very own epicurean creation... "Absinthe Pavlova"!!!
I decided to forego the cake this year, and try my hand at an inspiration I had about a week ago to make an ethereal concoction of baked egg white meringue, with a fluffy, whipped center flavoured with my own Salem-brewed Absinthe. The smell is divine, and I can't wait to try some once cooled!
Next year, I will try and make it with black licorice bats in the center to play up the anise essence. I do believe this has the makings of becoming a trademark dish... :)
