Also ~ Another Neil Gaiman in his original Kambriel frock coat sighting today. I'm rather enjoying seeing its travels through time and space... This time it made an appearance whilst Neil is at the Marge Simpson studio recording his part today as a British Author on "The Simpsons"! My imagination is running rampant with the enjoyable (even if remote) possibility of them drawing him in this for the episode:



On the other side of the country, we're coated in a thick, serene blanket of snow. Inspired by that theme, we made crepes filled with lemon curd and grated lemon zest, with a snowy dusting of confectioner's sugar over the top.

Doesn't he look happy? I'm really looking forward to the episode, entitled "The Book Job".

The lemon curd was something I picked up at Trader Joe's with absolutely no plan for how to use it, and the lemon zest was fresh :)

Another easy lemon-curd recipe, courtesy of one of my employees:

1 package sugar cookie dough (or make a batch of your own)
1 jar lemon curd
1/2 c. pecans

Roll out cookie dough and place in the bottom of a 13x9 pan. Save the leftover bits and bobs of dough that result. Bake according to directions for about 6-8 minutes to firm up the dough and brown it a tad. Spread lemon curd over the dough. Mince the pecans and mix them with the leftover tiny bits of dough (and some brown sugar if you like). Sprinkle over the lemon curd and bake until the top is browned.

Voila! Easy and delicious lemon bars!

I've got a handed down through the generations English lemon bar recipe which is vastly more time consuming and henceforth, infrequently made even though it's a real treat... I'll have to remember this as an option when something needs to be made *fast* :)

I made little tarts for a party a couple of years ago using a standard gingerbread-cookie dough and some lemon curd, and they were marvelous. Thumbprint cookies would work as well.

And now I'm craving crepes, darn you. ;)

My very favorite high school teacher taught me how to make crepes like that - in a classroom, on a hot plate. Seriously.

He passed away this year, and I miss him terribly. (And yes, he was my French teacher. Dear, sweet man.)

I'm so sorry to hear about your teacher. But your story? That is precisely where and how I learned to make them as well! My teacher was born and raised in Bretagne, and just today, I was wishing there could have been some way to give him a plate of these, and let him know how highly I thought of him.

Perhaps not terribly off from Sideshow Bob's hair, only darker and a touch more sinister? I look forward to seeing how his character gets incorporated into the script... They should have him help on one of the Halloween specials.

Yuuuum. I love me some lemon curd. Whenever I have a ton of egg yolks left over from making meringues, I use them up making curds of carious flavors, but mostly lemon.

I've yet to make my own curd... and now that you mention it am trying to remember where the yolks went last time we made meringue (maybe elsewhere in the recipe for another part of it?).
